Wine produced from organically grown Grillo grapes, mainly on the estate of Sambuca di Sicilia in the Province of Agrigento. This grassy vineyard at 200m above sea level boasts calcareous soils. It enjoys the shade of a wonderful tuff quarry and is gently caressed by the sea breezes blowing from the Mediterranean.
Winemaking: The grapes are destemmed and pressed away from air (“reduction” vinification technique), decanted naturally andfermented in steel tanks for 10 days at controlled temperatures (18°C). Maturation on the lees for 5 months in steel tanks with continuous stirring of the fine lees, so as to give the wine a fuller body.

Nose: Distinctly tropical aroma with notes of mango and papaya,which blend with hints of jasmine and white flowers.
Palate: Balanced and harmonious, with a delicate acidity and good persistence.
Pairings: With its elegant fresh flavor, this Grillo is the perfect complement to appetizers, soups, pasta, white meats and fish.
